The proximity of the sea, the Mediterranean climate, characterized by hot dry and prolonged summers and mild winters with low level of rain, combined with the characteristics of well drained soils, protected by northern side of the mountain chains of Monchique and Caldeirão, determine a micoclimate with the highest number of sun hours in the country, which promotes the maturity of the grapes. The combination of all these factors provide the grapes with a unique and well appreciated subtlety of tannins which is later transferred to the wine. In order to obtain high quality wines it is necessary to choose a good variety of casts and careful vigilance is also required throughout the vine's vegetative cycle. The majority of the Cooperative's associated wines are under careful protection and are followed by an expert during this period. The grapes harvest is then carried out only when the optimum maturity degree is achieved and by careful manual labour during which only the finest grapes are selected. In order to comply with the consumer's avid taste requirements and in an attempt to diversify the production, new casts have recently been introduced such as Syrah, Cabernet and Sauvignon Blanc. In 2003, the first Syrah wine produced in the Algarve “Salira Syrah” 2002 was marketed with great success and was soon sold out.  The area of production of this particular wine was then expanded in order to increase the yield, still maintaining the desired quality. In 2004, a new wine was created, “O Monte da Aranha 2003” made out os casts such as Cabernet Sauvignon, Negramole, trincadeira and Aragonês. This wine is ideally suited to compliment the tradicional Algarvean gastronomy, and has been selected as a high quality regional product which simultaneously pleases the foreign palate.
